Welcome to Meal Planning! (Week 1)

Hello everyone!


I am finally starting a meal plan sparkler post series! Hopefully this series will help you start thinking about meal planning and will give you some strategies to cut down your current grocery bill. 

Each week I will post my shopping list, my grocery totals, my meal plan for the week, and some of the recipes I will be using. My weekly spending goal is 30 dollars for food for the week (or less of course!). I try to keep non food item ("personal item") spending to under 25 dollars a month (this includes cleaning supplies, paper products, and personal hygene products). Since I don't use makeup and I use reusable menstrual products this is fairly easy for me but it may not work for everyone.

This week I went a little over my budget (as you will see in a moment) BUT I did a "low spend month" last month so I have a little flex room in my budget and I wanted to get a few "treat" items.

***Also note, I'm avoiding using dollar signs since that sometimes gets filtered by the spam filters on the site so when you see me mention prices they will not have a dollar sign but you get the idea******


Now for this week's grocery haul:


My totals for the week are:

34.50 for groceries

6.00 for personal items


Grocery items:

  • 1 package of hash browns
  • 1 package of hot dogs
  • 1 bag of lots of grapes
  • 1 tub of basil
  • 1 bag of fresh green beans (about half a pound)
  • 1 ear of corn
  • 1 lime
  • 1 tomato
  • 1 lemon
  • 3 avocados
  • 1 tub of hummus
  • 1 dozen eggs
  • 1 bag of frozen peas
  • 1 box of farfalle pasta
  • 1 chicken stock
  • 2 boxes of veggie spaghetti (normal pasta made with spinach and zucchini)
  • 1 box of cereal
  • 1 bag of corn chips
  • 1 taco kit


Personal items1 bottle of oxyclean1 bag of rice for heat packs


Meal plan time!

  • Sunday (7/1)- Pick plate because it is ridiculously hot (I will make some guacamole, an ear of corn, some corn chips, green beans and a ton of grapes)
  • Monday (7/2)- Tacos
  • Tuesday (7/3)- Leftovers
  • Wednesday (7/4)- Hot dogs with pesto pasta and salad (because fourth of July!)
  • Thursday (7/5)- Stir fry
  • Friday (7/6)- Leftovers
  • Saturday (7/7)- Finish off the pesto with some pesto pasta





  • 1 avocado
  • 1/2 lime juiced
  • 1 roma tomato
  • pinch of onion powder
  • pinch of garlic powder
  • salt to taste


  1. Mash avocado up in a bowl to desired consitency 
  2. Add lime juice, garlic powder, and onion powder
  3. Chop tomato and gently stir in
  4. Enjoy!


Pesto (dairy free)


  • ~1 cup basil
  • 3 tbsp pine nuts
  • 1/2 lemon juiced
  • 1 tsp salt (or to taste)
  • 3 tbsp oil (or enough to achieve desired consistency)
  • 1 tbsp garlic finely diced


  1. Rip basil leaves off of stems and place into a food processor
  2. Toast pine nuts on the stove for ~3 minutes until lightly browned (do not use any oil)
  3. Add in toasted pine nuts, lemon juice, garlic, and salt
  4. Pulse until ingredients are chopped up and well mixed
  5. While pulsing the food processor add in the oil slowly until desired consistency is achieved (you may need to periodically scrape the sides of the food processor to make sure everything gets incorporated)
  6. Serve with pasta (or just eat it straight with chips because it is amazing)
