Meal Planning: A Short Week (Week 3)

Hello everyone!

 

Another week, another meal plan! This week I have a bit of a short weekly meal plan due to some upcoming travel but the meal planning must go on!

  • Chicken Thighs
  • Cereal
  • Ground Turkey
  • Onion
  • Mango
  • Spinach
  • Peanut butter cups (treat item since I was under budget)

Sunday: Leftover Tacos

Monday Pizza

Tuesday: Leftover Pizza

Wednesday: Roast Chicken

Thursday: Leftovers and some potstickers

Recipes:

Dairy Free Pizza with Homemade Pizza Dough

Ingredients (dough)

  • 3.5-4 cups AP flour
  • 1tsp sugar
  • 1 envelope yeast
  • 2 tsp salt
  • 1.5 cups warm water
  • 2 tbsp oil

Directions:

  • Mix flour, sugar, and salt. Pour yeast on top.
  • Add the warm water to the mixture and let it sit for a few minutes.
  • Add the oil
  • Mix gently by hand or with a stand mixer until the dough forms into a ball
  • Turn out dough onto a floured surface and knead until it is smooth and firm.
  • Grease a bowl and place the dough in the bowl. 
  • Cover and allow to rise in a warm place until doubled ~1 hour
  • Punch down and divide in 2
  • Let rest for 10 minutes (or store in the fridge at this point)

Now for the pizza

Ingredients

  • Spinach
  • Onions
  • Red sauce of choice
  • Shredded chicken
  • Pizza dough

(You can use whatever toppings you like, I've used meatballs to make a meatball pizza, I've used ham and roasted red peppers, really just use your imagination)

Directions

  • Preheat oven to 450 degrees F
  • Roll out dough to your desired crust thickness
  • Prebake for 5 minutes
  • Remove from oven and add toppings
  • Bake for 15-20 minutes until done (crust is golden brown and cooked through
  • Enjoy!
