I think I’m suffering from a meat overdose. Christmas brought with it all things carnivores like myself find delightful, from chicken and turkey to ham, brisket, and fish—but now I need to distance myself. Too much of a good thing can be deadly. Also, all the cooking that went into the holiday has left me feeling a bit burned out. The last thing I want to do is slave all day over a stove, or risk a horrible chopping accident. Instead, I’ll be making broccoli casserole from entirely pre-packaged ingredients, á la Sandra Lee. Toss it in the oven for thirty minutes and you’ll have a really tasty, vegetarian dinner. It’s perfect for tricking people into thinking you can cook.
Broccoli Casserole
Serves 4-6
Ingredients
1 10 ¾ oz. can cream of mushroom soup
2 1 lb. bags of chopped frozen broccoli
½ cup mayonnaise
1 egg, beat
1 cup mild cheddar cheese
1 pkt. Ritz crackers
Directions
- Preheat oven to 350°F
- Microwave the packs of broccoli, so they are completely thawed. Squeeze the water from the broccoli.
- Combine ingredients in a bowl.
- Bake for ½ hour
- Let set for 5 min before serving/eating.
Anyone else suffering from an overdose of meat?
